Whisk a béarnaise, thicken a stock, or prepare a stew from sauté to simmer with this versatile and durable chef's pan. Measuring 8-1/2 inches across the top and only 6 inches across the bottom, this pan has flared sides for faster reduction and a rounded bottom perimeter to help you scrape out every last spoonful of sauce. Like all of the products in Calphalon's commercial hard-anodized series, this pan distributes heat efficiently, so foods brown quickly and cook uniformly. (First-timer's tip: Try cooking over a lower setting than you customarily use. Calphalon cookware conducts heat so well that it's easy to overdo the first few times around.) Unlike cookware coated with a synthetic nonstick finish, the hard-anodized surface won't chip, crack, or peel if you use a metal spatula, and it doesn't react with acidic foods such as citrus or tomato. The ergonomically designed stainless-steel handle stays cool for stovetop cooking but won't be damaged in the oven. (Be sure to use a mitt.) All of Calphalon's commercial hard-anodized cookware comes with a lifetime warranty, and if treated with care, it'll last as long as you do.
