This is the seventh Calphalon Commercial Hard-Annodized pan that I have purchased in the past year, and I love it. It has all of the usual attributes that I find worthy of this cookware line: 1. Extremely hard cooking surface that food rarely sticks to,
2. Fast, even heating,
3. Excellent browning abilities,
4. Stay-cool handle,
5. All metal, commercial construction to last a lifetime
6. Comfortable and efficient handle design,
7. A lid!
8. Easy clean-up!
In addition to the qualities of the cooking surface, I really love the size and feel of this pan. At three quarts, I am able to brown four large chicken breasts at once, deglaze, put the lid on, and then pop the whole pan into the oven to finish what becomes an incredibly tender chicken meal.
I highly recommend this line of cookware for its performance, and this particular pan for its useful size and features!
Description of Calphalon Commercial Hard-Anodized 3-Quart Sauté Pan with Lid
Calphalon Commercial hard-anodized pans are made for the more serious cook who is looking for kitchenware built to last a lifetime. This straight-sided, 10-inch-diameter, 3-quart sauté pan, with its heavy-gauge aluminum bottom and sides, heats evenly and won't warp under the higher heat needed for pan-frying. Its curved cast stainless handle is easy to grip and stays cool, thanks to a V-shaped split where it meets the pan. There's also a short looped utility handle on the opposite side of the pan for heavy lifting. The nonporous and nonreactive hard-anodized surface resists sticking and doesn't affect the flavor or color of food. It's also tough enough to handle stainless-steel utensils. Unlike pans with plastic or wood handles, the extremely sturdy all-metal construction provides you the flexibility to take the pan to the oven or broiler. But do remember to hand wash your Calphalon pans--dishwasher detergents are bad for the finish and their use voids the lifetime warranty. --Dale SteinkeAll Pans
