This Calphalon Commercial Nonstick Cooling Rack is larger than most "cookie racks." It is 12-in. x 17-in. So not only can one of these cooling racks hold a tray full of baked cookies, but also it can support a large pan of lasagna or peach cobbler, for example. You can also use this rack inside of a baking pan in the oven, but I would not recommend its use for the roasting of poultry, game, or meat--instead use one of the Calphalon nonstick roasting racks that are designed for this purpose. Take care with washing this rack by hand. The nonstick coating is quite durable, but you will want to use a mild detergent and a nylon scrubber. Try to buy at least two of these cooling racks if you plan to bake a lot of cookies.
Description of Calphalon Commercial Nonstick Cooling Rack
Generously sized at 12 by 17 inches, this rack comes in handy during baking time--for instance, when cookies need to be elevated and cooled so their bottoms don't become soggy. The rack can also be used in a large roasting pan to lift poultry or a meat roast off the bottom of the pan, ensuring even browning. Nonstick, it won't tear either a delicate crust or a turkey's skin.
