With straight sides providing extra room, this 3-quart sauté pan is ideal for sautéing, braising, broiling, and cooking casseroles on the stovetop or in the oven, where it's safe to the highest temperature. It also goes handsomely to the table for serving. It comes with a glass lid tempered for hardness and domed to collect moisture and return it to food during cooking. The exterior of Calphalon's Commercial Stainless cookware is made of heavy-gauge, matte-finish aluminum anodized for hardness so it won't chip, crack, or peel; the material also ensures fast, uniform heat distribution. The interior is 18/10 stainless steel with a bright satin finish to conceal inevitable utensil marks. This pan's satin-finish, cast-stainless-steel handles are multiriveted for durability and resist heating on the stovetop. The loop handle is large enough to accommodate an oven mitt, plus it's rounded for comfort and has a thumb groove for a firm grip. The pan's flared rim facilitates dripless pouring.
