With a shorter profile than its meat-cleaver cousin, the Nakiri Knife is the traditional Japanese vegetable cleaver. This knife from Calphalon s Katana Cutlery series prevents food from sticking by way of a hollow edge, which creates an air pocket between the knife and food. Measuring seven inches in length, the blade is hefty enough to divide acorn squash and deft enough for the finest juliennes.
