I've used Calphalon products for many years and tried different types of pans. Calphalon One remains my favorite. The 3 qt saute pan (with lid) is an excellent size. It cooks everything very well. I especially like to cook meat dishes that need a sauce or gravy in this pan (chicken francais is a favorite). When you cook any kind of meat and want a sauce (or gravy) you cannot find a better product than this one. When the meat is cooked, slowly add warm water, wine, or whatever you enjoy to make your sauce to the pan (never cold water-you don't want your pan to warp) and it creates the absolute best au jus you will ever taste. Season however you wish and you'll enjoy an excellent meal. This is not a non-stick pan, but when you add the water, wine, or favorite liquid for the gravy, there isn't much to clean up. Everything seems to get absorbed into your sauce. Non-stick pans do not give you the taste or richness that these pans give you. Let your pan cool and add some hot water & soap and it cleans up great. If needed, Barkeepers Friend and a gentle scrubbie sponge works well on these pans. For the extra minute it takes to clean the pan it is well worth it.
