I originally bought this pot to boil water. The wide diameter let me take full advantage of a full flame 17500 BTU burner. For the past several months, it has done that job admirably. I never asked any more of it as I have several other pieces for the "real" cooking.
I just cooked for 20 people coming over for a dinner party and was making a soup in my Le Creuset dutch oven. I decided to make the braised pork dish in this Calphalon One Infused Anodized 8-1/2-Quart Dutch Oven with Stainless Steel Lid. It did an unbelievable job. The pork browned perfectly, creating a gorgeous fond without any burning, even after 3 batches. Once I added the onions and wine, all of the beautiful fond came right up and added a great taste to the sauce. I am really impressed.
If you need to brown and braise large quantities, I highly recommend this pan!
Description of Calphalon One Infused Anodized 8-1/2-Quart Dutch Oven with Stainless Steel LidThe Calphalon ONE Infused Anodized 8.5qt Saucier is the ultimate dutch oven and so much more. Constructed of heavy gauge aluminum for superior conductivity. Features Calphalon's revolutionary & patented infused surface that cooks like a a traditional pan but cleans up like a breeze. We have taken our tradtional hard anodized surface and infused a polymer similar to nonstick into it's pores- creating a surface that is a combination of both properties. Essentially you are cooking on metal and polymer- so food still sticks enough that you get incredible searing and browning, but releases easily for simple clean up. This is not a nonstick pan, you still need to use fats or oils when you cook, but not much- just enough to coat the pan. The surface is metal utensil safe and can go into the broiler to a temperature of 700 degrees F! Clean up is easy, generally just soapy water and a sponge, but to keep your pans looking perfect we recommend using "Bar Keepers Friend" and a green "Scotchbrite" nylon pad- inside and out (both can be found inexpensively in most grocery stores). Lifetime warranty and made in the USA.
