You're probably thinking "but I don't poach fish" or, even if you do, "$150 for a fish poacher? Holy mackarel!". Nonetheless, you want this pan. Swallow hard, and buy it "just for the halibut". While probably *not* approved by the Sturgeon General, this pan, designed to fit over two stovetop burners or in the oven, is ideal for more than just gently simmering a whole (or long filet of) fish. It's great for cooking sheet pastas, such as lasagne - no more broken noodles, as well as long pastas. It's also a very useful pan for making stock (you can roast the bones and aromatics, dump the water in, set one burner to simmer, and allow natural convective currents in the pan to force the scum to one end) and you won't believe how clever it is for reducing stock to glace de viande (that paste-like stock concentrate used to enhance sauces).The anodized aluminum material, mentioned in numerous reviews for other Calphalon products is an even-heating, long-wearing, reasonably-easy-to-clean joy. You're going to have this pan for a long, long time. If you're buying a gift for a Foodie, here's a perfect choice. They probably don't already have one, they probably look at them and sigh wistfully as they pass by, and they might even invite you over for dinner when they use it. Time for me to clam up.
